Given recent coverage of slavery and abuse in the international shrimp trade, area chefs and consumers are increasingly turning to local products. Stoughton’s Sky8 was the first shrimp farm in Massachusetts. The sustainably farmed fishery — whose shrimp have been featured since 2013 on menus at local restaurants including Erbaluce, Loyal Nine, Mei Mei, and Select Oyster Bar — recently started selling at retail at Kam Man Food in Quincy. Owner James Tran plans to also be selling in Dorchester’s Truong Thinh market by the end of the month. Tran’s facility is operating at capacity, and he expects to offer no more than 100 pounds per week at retail, though he hopes to expand over the next year to add additional stores. Consumers can expect to pay $16-$20 a pound (by way of comparison, shrimp from New York’s Eco Shrimp Garden are $25 a pound). Massachusetts has two other shrimp farms: Tasty Harvest in West Boylston and E&T Farms in West Barnstable.
